for me the sweet potatoes were the stand-out dish. we've been using Madhur Jaffrey's "World Vegetarian" for a week and as with her other cookbook we own, "Quick and Easy Indian Cooking," every recipe is spot-on. seriously, you don't have to tinker or add salt - perfectly balanced and wonderful!
to make - you parboil the cubed sweet potatoes with turmeric and set aside. in a wide and deep pan saute dried hot chiles, cardamom pods, a cinnamon stick and curry leaves [we used basil per her substitution note], when fragrant throw in thin sliced onion and cook to golden brown. then you mix in the potato and cook until tender and season with red pepper flakes, salt and fresh lime juice and zest [the zest was scot going off the map - i've trained him well!]. the flavors sung, it was awesome.
the couscous simply has shredded carrot, minced mint and parsley and feta cheese stirred in along with salt, pepper and a splash of olive oil.

okay, in english, chicken in a spicy red sauce and green peas in a creamy sauce.
madhur jaffrey pleases the palate yet again. scot prepared these for dinner to much success. our only notes were that the chicken and potato pieces were too large for our tastes. the flavor was great and we thought it would be nice to add other veggies like carrot, cauliflower and okra and definitely shred the chicken after it cooks. the sauce is seasoned with cumin seeds, cinnamon, cardamom, cloves, dried chilies, turmeric, cayenne and tomatoes.
the peas were addictively delicious! it was made with sugar, cumin, garam masala, cayenne, tomato paste, cream, lemon juice, cilantro, jalapeno, cumin seeds and mustard seeds. indian cooking always comes with a long list of ingredients but so worth it - all that layering of flavors is insane but so wonderful. this cream sauce would also be great tossed with other veggies as well, cauliflower tops my list.
